Aw thank you Tracey! I’d say it feeds about 25 people! the best tasting fondant is homemade marshmallow fondant, and the best tasting fondant you can buy is Satin Ice! The tip of the tail needs to be fully hardened before you add it to the cake though, so no one will be tasting that part 😛

For the scales, you can also pipe dollops of frosting, and spread them into scales using an offset spatula. This method is a lot harder to do though, and is challenging to get consistent looking scales.

Hope that helps, happy baking!

I have a couple questions. How many people will this size cake feed? Also, I’m not a fan of the taste of fondant. Is there a particular fondant that actually tastes good & not just a sugar paste? Or do you have any tips on how to do the scales in a buttercream frosting instead? I realize the tail has to be in fondant.

Okay! I’ll refrigerate it after the crump coating and then wake up early to assemble the second layer of frosting and scales the morning of. Thanks for quick reply 🙂

fondant in the fridge can be a bit scary, because it can get condensation on it as it thaws, creating a goopy mess!! I recommend adding the fondant details all the day off!!

And then add the fin in the morning? Thanks!

Sadly I do not! But it was a TON! Make more than you think you’ll need, I ran out towards the end and had to make more :/

I plan to make the same size as yours. Your work is beautiful. Thank you. Rita M

Do you know how much that is in grams?
I‘m from Europe and couldn’t find an equivalent.

I believe wilton makes a plastic one, and it works ok but is no where near as good as the metal ones! If you dont bake much, a plastic turntable will do. however, if you do bake a lot, the metal one is worth it! Mine is an Ateco, and I’ve had it for years!
