Something about the little bit of almond extract did it for me. So good! Also such a fun twist to the layers with the cookie dough. I suggest definitely use the parchment paper though, I wasted a whole batch because it stuck. Oops

Can you clarify which is correct? Thanks!

Hi Megin,

This makes a pretty big cake that feeds 25-30 people depending on the size of slices you make. You can definitely bake the layers 2 at a time, and leave the batter out at room temp. Just be sure to bake the next two layers as soon as you can once the first two are done. Hope that helps, happy abking!

If I only have 2 cake pans can the half the batter sit while I cook the first 2 or should I split the recipe in half and make 2 batches?

Hi Heather,

I know this sounds crazy, but I’d actually recommend making my marble cake recipe, and adding sprinkles to vanilla portion of the batter, then baking 2 sprinkle layers and 2 chocolate layers.

That’s probably easiest. If you just add cocoa to the funfetti cake recipe, it drys out the cake. My marble cake recipe makes two batters from one, by adding in some additional ingredients. I think that’s your best bet!

Hope that helps, here’s the link: https://chelsweets.com/2019/01/30/easy-marble-layer-cake-recipe/

Should i just half each recipe, or could i just add some cocoa to half of the funfetti recipe? What would you recommend?

Hi Logan,

No worries if you don’t have room in your freezer! That just helps speed up the process. The layers can definitely cool at room temp, it will just take slightly longer. To bake 2, 9-inch cake layers will take a bit longer, and I recommend placing a flower nail in the center of your pans to help conduct heat to the center, to help the layers bake more evenly and quickly.

I hope that helps, happy baking!

1. Do you know how the recipe would be adjusted for two 9-inch cake layers (so only one middle layer of cookie dough)?

2. If I don’t have room in my freezer to cool the cake, what is your advice? Is it just that it takes longer to sit at room temperature?

Thank you so much for this and your YouTube channel!

Hi Nicole,

So sorry for the delayed response! You can totally make your cake layers in advance, as long as you wrap them properly! I walk through the process here: https://chelsweets.com/2018/10/28/how-to-make-cake-layers-in-advance/

Hope that helps, happy baking!
