Hi Anne,

I’d let the layers mostly thaw before adding on any fondant, otherwise the cake can settle as it thaws and cause bubbles in the fondant. Hope that helps, happy baking!

haha we’re twins!! Great question. It can vary depending on how cold your freezer is and how big the cake layers are. I also like to have the layers still be a tiny bit cold when I stack cakes (makes them easier to frost, less crumbing), so I usually start assembling a cake after the layers have been out at room temperature for about 20-30 minutes, and my layers are usually 7 or 8 inches.
