For the cake flour substitution, aren’t you left with less flour overall? A qtr cup should be 3 to 4 tablespoons. Or is it based on the weight?

I’m trying to make a gluten-free, dairy-free, egg-free cake for an allergy friend. Will all these substitutions combine the same? I’m thinking of using the King Arthur’s gluten free flour combo, dairy sub yogurt (probably soy) for the sour cream, and the applesauce+baking powder. If I do the applesauce for the egg substitution does it add apple flavor?
