Hi Kathy,

Totally fair point! I didn’t include the weight in this post because I wanted it to be applicable to all cake recipes, and different batters weigh different amounts. One batch of my vanilla batter makes about 1800g, and makes about 10 cups of batter. So each cup of that batter should be roughly 180g. Hope that helps, happy baking!

@Chelsweets, With your vanilla cake recipe being your standard for wedding cakes, guessing you know the weight of a cup of cake batter? Putting in say, 8.5 cups of batter isn’t feasible measured by cups; knowing how many grams or ounces in cup would be SO helpful for planning different layers. Can you provide that info? Hi Lisa,

One batch of my WASC cake recipe should make a thin, 12 x 18 inch sheet cake! It should bake up to be about 1 inch tall.You can definitely divide the batter and add cocoa to part of it, but the cocoa powder will make the chocolate batter a bit dried.

You could also use my marble cake recipe and add in a bit of almond extract, and swap the buttermilk for sour cream! Here’s the link to my marble cake recipe: https://chelsweets.com/easy-marble-layer-cake-recipe/

Hi Vouls,

If you’re using a fan forced oven, I would recommend baking the cake layers 25 degree F or 14 C less than a recipe calls for. My recipes all use a standard (not fan forced/not convection) oven. Hope that helps, happy baking!

I convert all my recipe ingredients to grams or ounces except for things that are measured with spoons. I weigh my mixing bowl and after I am done mixing my batter I weigh the bowl with batter then I subtract that the empty bowl weight from it. I then divide that by how many cake pans I am using and then pour that amount into each pan. This way everything is the same each time. And plus I dirty way less items!
